Ingredients
- Onion, chopped β 2 tbsps
- Red bell pepper β 1β4
- Cherry tomatoes β 1β4 cup
- Mushrooms β 1β4 cup
- Olive oil β 1 tsp
- Avocado β 1β4
- Spinach tortilla β 1
Directions (12 min β’ Easy)
- Produce Prep- Peel & chop the onion, slice the bell peppers, slice the cherry tomatoes, wipe clean then slice the mushrooms.
- Add olive oil to a pan over medium heat, add the onions, bell pepper slices, tomatoes, & mushrooms.
- SautΓ©, stirring frequently, until the vegetables have softened and browned slightly, about 5-7 minutes.
- Add the avocado to your wrap, followed by your veggie mixture. Wrap it all up & enjoy!
